A lifelong passion
Our head chef
Born and raised in Rome, Head Chef Giulio Morroni started his culinary journey in his Nonna Anna’s kitchen, where he learned the time-honoured secrets of Italian cooking.
His love of authentic flavours and traditional techniques has taken him to kitchens in Vatican City, where he once cooked for Pope Benedict XVI, and then on to Scotland – his home for the last 15 years.
His favourite dish, carbonara, reflects his commitment to simplicity, authenticity and bold Italian flavours. No fuss – just damn good pasta.
